Allesverloren Tinta Rosè 2018

Fresh raspberries and cherries on the palate with a hint of vanilla.

Exhibiting a perfect sugar/acid balance, it has delicious lingering aftertaste.

Grape Varities: Tinta Barocca, Touriga Naçional, Merlot, Petit Verdot and Shiraz.

Food Pairing: Excellent enjoyed on its own or with fresh salmon, trout or Asian cuisine.

Vintage:

Only the finest grapes were selected and harvested by hand at 20 ̊ to 22 ̊ Balling during the beginning of February.

The juice was taken of the skins as early as possible in the process to get the lovely light colour.

The juice was then slowly fermented at 12 ̊̊C to 14 ̊̊C for about two weeks to produce a fresh and fruity rosé.

Allesverloren Chenin Blanc 2017

On the palate this medium bodied wine shows nice ripe stone fruit, great balanced acidity and just a hint of oak. It has a very elegant finish.

Subtle nuances of lead pencil and oak notes, give an indication of the premium barrel selection.

Colour: The wine is brilliantly clear with a green tinge. 

Grape Varieties: Chenin Blanc

Food Pairing: This wine pairs well with seafood, chicken or summer salads.

Vintage:

The grapes come from bush vines in the Swartland region. The grapes were handpicked at 22 ̊ - 24 ̊ Balling.

After crushing, the juice was clarified and inoculated with pure yeast culture. The wine was left on its fermentation lees for 3 months before bottling.

Allesverloren Tinta Barocca 2017

 A combination of red berry fruit with a hint of chocolate, vanilla and oak spice aromas.

An elegant medium- to full-bodied wine with intense berry fruit and subtle oak spice aromas. Tannins are well structured and linger on the finish.

Grape Varities: Tinta Barocca, Touriga Naçional, Merlot, Petit Verdot and Shiraz.

Colour: Deep ruby red

Food Pairing: Excellent served with game and grilled or roasted red meat.

Vintage:

The grapes were hand-harvested at 23°to 25° Balling in mid-February. The juice was fermented on the skins for five to seven days at 25°C.

After malolactic fermentation the wine was aged in wood for eight months, using new, second- and third-fill French oak barrels.

Allesverloren Shiraz 2016

A rich and full-bodied wine with a good tannic structure and ample ripe fruit flavours.

An abundance of plums with faint black pepper, a hint of bacon and cigar box aromas in the background.

Grape Varieties: Shiraz

Colour: Deep red with a garnet rim.

Food Pairing: Excellent enjoyed on its own or served with poultry, veal and other red meat dishes.

Total Acidity: 6,8g/l

Vintage:

The grapes were harvested by hand at between 23° and 26° Balling towards the end of February, when they exhibited prominent varietal flavours and when the tannins were ripe but the berries still firm. Each block was vinified separately.

The grapes were fermented on the skins in open tanks at 25° C for five to seven days and left on the lees for four months to impart intensity of colour and flavour as well as to ensure the wine sufficient structure to age well.

After alcoholic fermentation the wine was racked of the skins and pressed.

Malolactic fermentation was done in stainless steel and cement tanks.

The wine was then barrel matured in small oak barrels for 15 months before bottling. This wine will show well for at least 10 to 15 years.

Allesverloren Cabernet Sauvignon 2016

Lots of berries (such as blackcurrant and cherry) flavours, with undertones of dark chocolate.

Prune, blackcurrant and cherry aromas come to the fore, and are complemented by subtler oak spice and cigar notes.

Grape Varieties: Cabernet Sauvignon

Colour: Deep ruby red.

Food Pairing: Grilled steak dishes, roast beef and strong cheeses.

Vintage: The grapes were harvested by hand at 23° to 24° Balling. Each vineyard block was separately vinified.

The grapes were fermented at 25°C for five to seven days.

After malolactic fermentation, the wine was aged in a combination of new (30%) and second-fill (70%) oak barrels for a period of 18 months.
