Story:

Our TAPPS Rosé is quite a small “de- luxe wine” – it’s really the juice extrac- tion from our best red wines before they start fermenting. This traditio- nal concentration method is also cal- led a free run, bleeding or Saignier. After extensive experience with Rosés from abroad, there was a desire to create a “non-German” wine possibly reminiscent of a Rosé from the Me- diterranean that was fun and not too bone dry. We implement this idea by using our aforementioned “deluxe grapes” and the ingenious compositi- on of individual grape varieties.

Although Müller Thurgau isn’t really a hip solo grape variety at the moment, it’s still one of the most under- rated varieties.

Müller Thurgau plants up to 25 years old form the leading and structured backbone of this cu-vée.

Other elements include Muskateller, Gewürztraminer and Sauvignon Blanc which are mainly from young plants and do not yet have the structure necessary to be bottled as a single variety.

The vineyards are located almost exclusively in the districts of Diedesfeld and Hambach and take advantage of the light and warm sandy soils.

Quick processing and cool fermentation make Müller-Thurgau wine the center or virtually the foundation of this wine.

The vine type flavors Muskateller, Gewürztraminer and Sauvignon Blanc bring through captivating fruity notes – they „enli- ven“ the wine!

The goal was to create an entertaining wine with colorful aromas and only moderate alcohol.

Story:

The TAPPS red is a wine cuvée that co- mes from two vineyards in southern Palatinate:

St. Laurent grows in a light sandy soil near Nussdorf and the Merlot thrives on clay soil near Walsheim.

The vineyards mainly slo- pe to the south. The use of chemicals in the vineyard is kept to a minimum and insecticides are not used.

An eco- logical nutrient cycle is attained using green manure.

The two types of vines were processed separately due to dif- ferent harvest times which depend on the peak of maturity of each type.

The grape de-stemming took place imme- diately after the grapes were received at the winery.

Next the grapes were crushed, fermented and left on the skins for 10-14 days. An over-pum- ping of the pulp called remontage oc- curred twice daily. This was followed by gentle pressing with a pneumatic wine press. Following organic ma- lolactic fermentation, the wine was stored in large oak barrels for several months and then bottled unfiltered.

Oliver Zeter Weißburgunder / Pinot Noir Blanc 2019

Story:

Pinot Blanc grows in the southern Palatinate region on loess and clay soils with a limestone subsoil. The vines are about twelve years old and the vi- neyard faces south. Guyot trellising, green harvesting and manual pruning lead to a reduction in yield and thus an increase in quality.

The use of chemicals in the vineyard is kept to a minimum and insecticides are not used. An ecological nutrient cycle is attained using green manure.

Immediately after the grapes were received at the winery, they were finely crushed and then subjected to six hours of maceration to release the vines’ fine flavors from the berry skins. This was followed by a gentle pressing. Subsequent fermentation took place in stainless steel tanks at 18° C and proceeded very slowly to protect the delicate flavors of the grape varieties. Then the young wine was left on the fine yeast for several months to foster its complexity. No fining was carri- ed out before filling and it was only clarified by a filtration process using cellulose.

The subsequent fermentation took place in stainless steel tanks at 18° C and proceeded

very slowly to protect the delicate flavors of the grape varieties.

A portion of the total amount was spontaneously fermented in wooden barrels.

Next, the young wine was left on the fine yeast for a few months to nurture the complexity.

No fining was carried out before filling and it was only clarified by a filtration process using cellulose.

This Riesling comes from two vi- neyards in Mittelhaardt. When it comes to raciness and finish, the hillside grapes are cared for by skeletal-rich and sandy subsoil in Hambach. The vines are now nineteen years old and are characterized by moderate growth and very late maturity. The remaining wine comes from the Nußriegel vineyard in Ungstein, one of the finest sites in Mittelhaardt. In the 30-year old vineyard, grapes are grown which make greatly refined wines paired with a delicate length. The grapes were gently pressed using a pneumatic wine press immediately after the grapes were received at the winery. The best possible oxygen exclusion during pressing decreased undesired oxidation and the consequent loss of flavor. The fresh must cleared by means of its own settling. Subsequent fermentation took place in stainless steel tanks at 18° C and proceeded very slowly to protect the delicate flavors of the Riesling. Following fermentation, the young wine was left on the fine yeast for several months in order to preserve the freshness and to shape the structure of the Riesling. No fining was carried out before filling and it was only clarified by a filtration process using cellulose.

The 12-year-old vineyard located on the northern edge of the Hambach estate on a light sandy soil with a siliceous clay deposit has simply perfect subsoil. The highly aromatic muscatel variety is inclined to a slightly abundant yield which was already curbed by a short pruning using Guyot trellising as well as green harvesting.Manual pruning contributes to an increase in quality. The use of chemicals in the vineyard is kept to a minimum and insecticides are not used. An ecological nutrient cycle is attained using green manure. Immediately after the grapes were received at the winery, they were finely crushed and then subjected to eight hours of maceration to release the vines’ fine flavors from the skins. This was followed by a gentle pressing. The subsequent fermentation took place in stainless steel tanks at 18° C and proceeded very slowly to protect the delicate flavors of the grape varieties. Then the young wine was left on the fine yeast for a few months to promote its complexity.

Pinot Noir (in Germany known as Spätburgunder) from the “Nussdor- fer Bischofskreuz” site comes from roughly fifteen year old vines which are rooted in sandy clay soil.The grapes are a particularly small and loose berry variant of the classic Pinot Noir which is lower in yield but higher in quality.

The use of chemicals in the vineyard is kept to a minimum and insecticides are not used.An ecological nutrient cycle is attained using green manure. By green harvesting, we reduce the yield further for a total of 8,000 kg/ha.Grape de-stemming or the removal of stems occurred immediately after the grapes were received at the winery. Then the grapes were crushed, fermented and left on the skins for about two weeks. During fermentation, an over-pumping of the pulp called remontage was done twice daily. After fermentation, gentle pressing occurred using a pneumatic wine press after removing the free-run juice. This type of treatment pro motes the extraction of aromas, color and fine tannins from the grape skins which contributes to even greater complexity. The Pinot Noir displays a fine, diverse and elegant cherry flavor and runs through a partial maturation in wood. Half of the wine was therefore stored for a period of ten months in used Vosges oak barrels. The young wine avoided mechanical stress during its processing period in the cellar. Subsequent bottling occurred without filtration.

PETZ comes from the vineyards around the villages of Hambach, Ma kammer and Edenkoben. Merlot, Cabernet Sauvignon, some St. Laurent and a tiny bit of Dornfelder (yes, it’s actually true!) are the grape varieties this wine is made of. The Dornfelder vineyard which has been cultivated by us since 2012 is now more than 20 years old. Despite its age and its small yield it produces a wine of exceedingly good quality. This is why we dared to integrate this variety into one of our Reds. After a traditional and open fermentation with a subsequent maceration that lasted several weeks, the must was crushed softly and the young wine was filled into used barrique barrels made of French Oak. There the different types of vines were matured and stored separately from one another for 10 months. Blending the single basic wines resulted in a Cuvée, which was bottled unfiltered and without prior fining. PETZ presents itself full bodied and fruity but at the same time with a multifaceted elegant demeanour.

A total of eight vineyards in southern Palatinate and Mittelhardt are planted with seven different Sauvignon Blanc clones. The distinct advantage is the different microclimates of the various sites which is beneficial in terms of flavor diversification. The soils in which the vines grow are just as distinct as the sites themselves. Training usually occurs as cordon which leads to a grape area that is linear and therefore easier to handle.

The vineyards are mainly kept green due to natural herbs and sowed grass. Depending on the year, harvesting occurs either by hand or with a harvester. Some of the grapes may already be relatively green with a sugar content of potentially 10% degrees alcohol while most are fully ripe and the rest may even be slightly overripe. The CO2 which is added as dry ice prevents oxidation during several hours of maceration. This fosters an optimal bouquet aroma. The grapes are then pressed in an air sealed pneumatic press. Fermentation occurs in stainless steel tanks of various sizes. Here, a variety of yeasts provides the necessary diversification. In addition, some of the wine is fermented spontaneously while another smaller amount is even aged in oak barrels. The young wine is filtered only once before bottling using a diatomite filter. At that time, the various individual bins are merged into the final blend. The result is a multifaceted aromatic and more pre- sent wine with structure and length.

The grapes from this three varietals Cabernet Sauvignon, Cabernet Franc and Shiraz come from different sites and vineyards at the Mittelhaardt. The very light and quickly warming soils with skeleton-rich gravel de- posits create the ideal conditions to cultivate these French types of vines. Yield reducing measures (usually gra- pe halving) paired with the excellent climatic conditions of the vintage allowed for the emergence of a red wine with an international character. Harvesting occurred as late as the we- ather and the grapes’ physical condition would allow. Botrytis-infected grapes were sorted out. The harvest was collected in small 20kg containing baskets. Then the grapes were crushed and fermented on the skins for two weeks.

After pressing, the young wine was immediately transferred to French oak barrels where organic malolactic fermentation also occurred. Maturation time in wood lasted a total of 12 months. After bottling, the wine spent another six months in the bottle before it was finally available for purchase.

We noticed a small plot on the Nuß- dorfer Bischofskreuz site of particularly slow-growing Pinot Noir grapes. It involves a special variation of this grape variety which only produces small berries and corresponds to the ideal of the best juice shuck ratio. For this reason, the grapes can spend more time on the vine, giving us completely mature berries. Another vineyard is located on the Heili- genberg site in Maikammer on a hill with dense and limy subsoil. Planted with vines from Burgundy, this Pinot vineyard yields a complex fruit aroma. Together with the robust Pinot Noir from Nußdorf, the result is a multifaceted, dense wine with a complex finish. A very traditional maturation took place in the cellar: the small berry grapes were only partially de-stemmed, crushed and fermented in small containers. Remontage or submerging the pulp was done ma-nually several times a day. The wine was subjected to subsequent refining through maturation in the wood: half in new and the other half in used 300 liter barrels made of Vosges and Allier oak. Malolactic fermentation also took place in barrels. This red wine doesn’t flaunt its German origin but stylistically corresponds to a Burgundy. It takes its time before presenting itself and is elegant rather than sturdy. A wine that speaks to you instead of shouting and more importantly it speaks for itself. By a yield equivalent of only 4000 kg/ha, the 2012 vintage is limited to seven barrels – it’s the equivalent of a total production of some 2,800 bottles.

Oliver Zeter Syrah 2016

In 2009 we planted the first Syrah vi- neyard in Hambach. 2013 followed a second one in the famous “Rhodter Rosengarten” location. The saplings came from a nursery in Orange/Rhône Sud whose vines are known and sought throughout the world for their outstanding quality. Both vineyards are defined by their east-south orientation containing a sand and gravel rich ground giving the perfect conditions for these warm-loving vines from the Rhone valley. The vines are grown to an established “Guyot Training System” allowing optimum light and access to the grapes. Even before the alignment and style it was obvious the watchword was “SYRAH” and not “SHIRAZ”! To create an authentic and sophisticated North Rhône style the Syrah grapes were supplemented with 5% from V******. This method of blending has a long tradition in the Rhone valley.

It is by the addition of these grapes that are not colourless but have an intensive complexion and the phenolic compounds therein that promote a stable colour in the Syrah grape. After a classical maceration, the wine spent 10 months in wooden casks then bottled without filtration or refinement.

On the nose it shows an optimal hint of lemon thyme, blackcurrent and white pepper, with taste accompanied by aromas of blue-berry, nougat and a little dark chocolate.

The grapes from this three varietals Cabernet Sauvignon, Cabernet Franc and Shiraz come from different sites and vineyards at the Mittelhaardt.

The very light and quickly warming soils with skeleton-rich gravel de- posits create the ideal conditions to cultivate these French types of vines.

Yield reducing measures (usually gra- pe halving) paired with the excellent climatic conditions of the vintage allowed for the emergence of a red wine with an international character. Harvesting occurred as late as the we- ather and the grapes’ physical condition would allow.

Botrytis-infected grapes were sorted out. The harvest was collected in small 20kg containing baskets.

Then the grapes were crushed and fermented on the skins for two weeks.

After pressing, the young wine was immediately transferred to French oak barrels where organic malolactic fermentation also occurred.

Maturation time in wood lasted a total of 12 months.

After bottling, the wine spent another six months in the bottle before it was finally available for purchase.
