This bold statement wine, which is big on aromas and flavours, has a lemony, cinnamon and nutmeg nose.

Vergelegen Chardonnay 2018

The wine shows an attractive lemony yellow-green colour with a complex nose of citrus, peach, tropical fruit and mineral tones. The palate is long and full with delicate wooding. Beautifully refined and elegant. This is the 5th year that entirely Estate-grown grapes have been used in the making of the Premium Chardonnay. The vineyards were cropped at 6 tons/ha - 70% of the grapes were barrel fermented and the rest in wooden tanks.  Selections were made in August 2016 before bottling in November 2016.  The grapes selected for this premium Chardonnay were sourced from Vergelegen’s Korhaan, Rooiland,  Rocklands , Slanghoek and Lower Schaapenberg vineyards.

Vinification:

Grapes were whole-bunch pressed and not given any skin contact. The juice, slightly clarified, was racked into 20% new French oak barrels (Francois Frère, Dargaud & Jaegle and 80% second, third and fourth fill barrels) for alcoholic fermentation. All the different vineyards were barrel fermented and matured on the lees for 8 months before bottling in November 2016.  Released: end January 2018.

Maturation: Drink over the next five years.

MARIANNE Rosè 2018

The idea was to make a Provence style Rosé, light pale pink in color and elegant with subtle fruit and floral notes on the nose and pallet. The grape varieties used are true to a real Southern France style rosé. All four cultivars were harvested specifically for Rosé production and pressed immediately when arriving into our boutique cellar - only the free run and soft press juices were used. The Shiraz and the Grenache were cofermented to produce a fine bodied wine with elegant aromas of rose petal, fresh cranberry and raspberry with a crisp acidity. Fermented separately, the Cinsault gave subtle aromas of orange and white peach, whilst the Mourvedre gave slightly more pungent aromas of black currant and strawberry, both with a soft round pallet. After blending the wine was left to mature in stainless steel tank with occasional stirring up of the fine lees to ensure that all those fresh fermentation aromas are well protected. The final assemblage allowed for a fine, elegant and voguish Rosé in colour, aroma and taste.

Diemersfontein Pinotage 2018

Inviting flavours of raspberries, cherries and pencil shavings on the nose, followed with rich fruit flavours of plum and berries rounding it all off with supple tannins on the palate.

Food pairing: South African staples Bobotie, Bunny Chow and Braai, all begs for a glass of Pinotage. Its versatility makes it a great partner with roast duck, lamb casseroles or even Chocolate soufflé.

Vinification: Harvested early in the morning. Bunches and berries were very small, which we believe ensured the high extract of the wine. The berries were crushed into stainless steel tanks and inoculated with yeast. Pump overs were done every 3 hours for 30 minutes to extract the colour and flavours. At 2°B the wine was racked and the skins pressed. The wine was inoculated with malolactic bacteria and took place in old barrels. After malolactic fermentation the wine was racked from the lees. The wine spends a further 16 months in a combination of new French – and American oak barrels.

La Motte Classic Collection Chardonnay 2018

Greeny straw colour. Fruity lemon and nectarine on the nose, with hints of cashew nut and lees as the only evidence of wood maturation.

A juicy and polished entry, medium-full, with lots of citrus and juicy peach on the palate.

Lively length with good freshness for a wood-matured wine.

Grapes for this wine originate from La Motte, Franschhoek.

The vineyard lies 200 metres above sea-level, against a southern and south western slope.

Vintage:

The preceding winter started late, but was cold enough to allow adequate dormancy.

For the second consecutive year, rainfall was lower than average and irrigation dams were not filled entirely.

Conditions for budding, flowering and setting were favourable (positive for harvest size), followed by a long, dry season (negative for harvest size). During ripening, cool nights were experienced (good for quality), while dry conditions still prevailed (disease-free and good concentration).

Heat-waves did not present problems. The above conditions resulted in healthy grapes and good concentration, analyses and flavours.

Viniculture:

All the bunches were whole-pressed and the clean juice was transferred to 300-litre French oak barrels where it was inoculated with yeast and fermented at between 17 and 20 degrees Celsius.

Malolactic fermentation was also in the barrels. One third of the juice was fermented in stainless steel tanks, without malolactic fermentation.

After fermentation the lees was stirred regularly over a period of 11 months. 25% of the French oak barrels in which the wine was matured were new. All the components were blended subsequent to maturation and the wine was bottled in the La Motte cellar in April 2018.

6 500 cartons (6 x 750 ml) were released as 2017 La Motte Chardonnay.

Vinification: The grapes were handpicked at phenolic ripeness and stored at 10 °C to ensure the finest flavor and freshness. Upon crushing, a temperature of 10 °C was maintained and both skins and juice were left in contact in French oak tanks for 10 days. Varying from stainless steel, this approach provides improved color and flavor stability. Upon fermentation, flavour and color is allowed to develop for a period of 4 weeks before the wine is transferred to 100% French oak 225l barrels for 16-22 months. The use of French oak allows the wine to retain certain flavors and extract tannin from the oak, resulting in a fuller mid pallet.

Miraval Rosè Cotes de Provence 2019 A.O.C

Pretty pale color, petal pink, elegant with shiny reflections. This 2018 presents a very beautiful and intense aromatic expression of fresh fruit and spring flowers. In the mouth, the acidity is refreshing; a great elegance and a nice balance dominate, with a saline finish. Miraval rosé is a wonderful blend of fruits aromas and freshness, made on an exceptional terroir in Provence.

Alc. 13% vol.

Vinification: The grapes are harvested exclusively in the morning and sorted twice. Destemming. ‘Pressurage direct’ for Cinsault, Grenache and Rolle.

The Syrah is vinified partially using the «saignee» method. Vinified in temperature - controlled stainless steel vats (95%) and in barrels (5%) with batonnage.

Terroir: Clay and Limestone vineyard, partially in terraces located at an average of 350 meters. Cool climate for the area with big temperature swings between night and day.

Situation: Issued from the Château’s best parcels (Muriers, Longue,Romarin), and from selected parcels in the best terroirs of Provence.

The Vintage:

The winter was mild and dry at Miraval, as everywhere else in Provence.

The spring, also very dry, was marked by a frost episode in April, unfortunately affecting part of the property.

In these particularly hot conditions, flowering was very fast at the beginning of June.

At the beginning of the summer, the vineyard was exceptionally healthy, thanks to the combination of a very persistent Mistral and the beautiful spring conditions. The summer was also very hot and dry, with occasional localised thunderstorms.

The end of summer conditions concentrated the sugars, acids and aromas in the small berries filled with fruit.

The first juices are very fruity, with softness and a nice balance. The 2017’s are promising and have a strong aromatic potential.

Tokara Cabernet Sauvignon 2017

This wine has a beautiful garnet colour. There are berry aromas of cassis, red currant and blueberries on the nose complimented by underlying notes of cocoa, fresh herbs and tobacco spice. The palate is packed with sweet berry fruit, flavours of dark chocolate and briary fruit with hints of dried tobacco on the finish. This wine will drink well now but will benefit from cellaring and will mature well into 2022.

Origin: All the grapes originated from Tokara’s vineyards in Stellenbosch.

Food pairing: Enjoy with grilled veal chops, meaty stews or a fantastic steak.

Blend: 89% Cabernet Sauvignon/3% Merlot/8% Petit Verdot.

Winemaking:

The grapes were destemmed before passing across a sorting table for the removal of all unwanted material and then crushed directly into stainless steel tanks and wooden upright (foudre) fermenters. The must was cooled to between 10 and 15°C for a cold soak before fermentation started naturally. Pump-overs, dellastage and punching down of the cap were implemented twice a day for extraction until the fermentation completed. The tanks were given maceration post fermentation if the quality warranted it and depending on tannin extraction and development.

The wines were put to barrel for malolactic fermentation after which they were racked, sulphured and put back to barrel for a further maturation. The wines spent a total of eighteen months in 20% new French oak and the rest being older French oak barriques. During the maturation the components were left on the gross lees for around 8 months before receiving their first racking after which they were racked another 2 times.

The wines received a light fining before filtration and bottling in November 2017.

94 000 bottles were produced.

CROPPING AND HARVESTING

All the vineyards yielded between 3 and 12 t/ha. The grapes were handpicked at optimal ripeness at sugars between 24 and 26 brix and acidities between 4 & 7.0 g/l.

Vinification: The grapes were handpicked at phenolic ripeness and stored at 10°C. The bunches were hand sorted before being pressed, maintaining a temperature of 10°C. The juice was fermented and matured for 9 months in 25% new French Acacia barrels, 25% in 2nd fill French Oak Barrels and 50% in Stainless steel tank to allow complexity to develop. During ageing on the fine lees, the lees were regularly stirred up in order to protect the delicate fruit aromas and to improve the mouthfeel of the wine.

La Motte Pierneef Collection Syrah Viognier 2017

Good colour and tight, concentrated tannins from the Walker Bay area are combined with spicy, intensely-flavoured wine from Elim, to produce a wine full of flavour and complexity. Intense aromas of green pepper, mulberry, rose perfume and spicy oak are present. Soft, velvety entry with polished silky tannins lively and fresh on the finish.

Origin: The Syrah component is from the Walker Bay (54%) and Elim (40%) areas, while the Viognier (6%) originates from Franschhoek.

Vintage:

The preceding winter was wet and cold enough to ensure good and even budding.

A hot August caused fast budding and an earlier harvesting season.

The rest of the season was dry, windy and disease-free, with no heat-waves – very positive factors. Due to climatic conditions, the harvest, that was large, lost moisture, enhancing concentration and eventually ensuring excellent quality.  Analyses and flavours were promising.

Viticulture:

The Elim vineyards grow in duplex soils with a high content of ferrocrete (coffee stone).

The Walker Bay vineyards grow in shallow shale and the Franschhoek vineyards in deep, sandy decomposed sandstone and granite.

Cool conditions at Elim resulted in a natural low yield of about 5 tons/ha.

The Walker Bay vineyards also rendered a low yield because of dry and windy conditions and shallow shale soils.

The Franschhoek Viognier was chosen because of its late ripening and was picked together with the Syrah, in order to co-ferment.

Viniculture:

Grapes from the different Syrah vineyards were harvested at different times, but always together with some Viognier.

The grapes were hand-sorted, followed by fermentation without stems.

Regular pump-overs were done during fermentation at about 25 degrees Celsius.

After about 25 days’ maceration, the free run and press wine were transferred together to 300-litre barrels and then matured for 14 months.

75% of the barrels were new.

Blending took place and the wine was returned to barrels for another 4 months before bottling took place in November 2016.

13 500 cartons (6 x 750 ml) were bottled.

Tinto Pesquera Crianza 2017

Powerful with rounded tannins that give rise to a silky, clear wine, with refreshing varietal characteristics that reappear under the tongue after the first few seconds in the mouth. Notes intertwined with the smoky notes of fine wood. Very pleasing to the palate, with a fruity aftertaste where blackberry and liquorice predominate, giving way to a final spicy finish.

Look: Clear and shiny appearance. Cherry-red colour with a violet rim.

Smell: Hints of black fruits, blackberries and plums. With spicy notes and hints of vanilla and liquorice, giving it a nuanced complexity that will evolve with the passage of time.

Origin: Within the municipal boundaries of Pesquera de Duero, facing south at an altitude of more than 800 metres.

Food pairing: Ideal for accompanying all kinds of meat such as grilled meat, roast baby lamb, stews, casseroles and hard cheeses.

Serving temperature: From 12 ºC to 14 ºC.

Very bright, polished platinum with green, vivacious hue. Complex, appealing nose with pear, citrus and floral notes developing into lemon cream, oatmeal and marzipan richness. On the palate the wine is medium bodied and linear but retains generous focused citrus fruit flavours with sleek, balanced and crisp acidity. In the Cellar: Some solids remained in the juice. Transferred to 50% new tight grain Allier French Oak and 50% second fill 300 litre barrels for fermentation.  Half of the barrels were inoculated with selected Chardonnay yeast, while the other half underwent un-inoculated, spontaneous fermentation.  After fermentation, the wine was given a racking to remove heavy lees and returned to barrel for malo- lactic fermentation.  The wine was barrel matured for 10 months before bottling.

Aging Potential: Up to six years, provided wine is stored in ideal cellar conditions.

The Meerlust Cabernet Sauvignon 2016 was vinified from selected fruit from low-yielding mature vineyards. The vines are densely planted on gravelly, low vigour Vilafontes and Dundee soil which has approximately 15 % clay to ensure water availability to the vines roots right through the growing season. The hand picked fruit was vinified in the traditional manner with partial un-inoculated fermentation and regular remontage. Only the free-run wine was used and aged for 21 months in tight grained French Nevers oak barrels. 50% of the barrels were brand new with 50 % second fill casks.

Meerlust Merlot 2016

2016 was a watershed vintage for our Merlot. We have been refining the viticulture to produce more balanced, flavourful fruit. This, coupled with the perfect conditions of 2015 has produced our best Merlot yet. Deep, youthful purple colour with a ruby rim. Intense dark brambly fruit on the nose, mulberry, liquorice and damson plum with hints of dark chocolate and spice, tempered by a stony minerality. The  medium-full bodied palate offers generous, ripe, pure Merlot fruit with refreshing acidity, structured yet silky tannins and pronounced length and minerality. There is a core of juiciness, opulence and richness typical of the variety, while the Cabernet Franc and Petit Verdot lend greater complexity to the wine.

Selected from vineyards of   25 year old Estate-grown Merlot plantings situated on well drained yet clay-rich Oak leaf, Vilafontes and Klapmuts soil. 30% vendage vert (green harvesting cluster removal) at 60% veraison to ensure concentration and even-ripening. Leaves around the bunches were removed 3 weeks before harvesting to ensure physiological ripeness of the berries.

Vinification:

Fermentation in stainless steel tanks with partial un-inoculated fermentation. Daily remontage for gentle extraction. A portion of the wine was given extended maceration on the skins for three weeks before pressing. Malolactic fermentation took place in 300 litre French oak Hogsheads. Maturation in 50% new Nevers French oak, 50% second fill Nevers for 16 months before bottling. The Meerlust Merlot 2015 is a blend of 85% Merlot, 8% Cabernet Franc for structure and acidity and 7% Petit Verdot which gives the wine a lifted floral aroma and polished, sleek tannins.

Rust en Vrede Cabernet Sauvignon 2018

Crimson red, there’s a certain sweetness to the aromas packed with ripe, wild strawberry, red and black cherries, mulberries and black currant. Nice and pure Helderberg fruit. This is a stylish wine with added earthy, savoury notes on both the nose and the palate. The texture is made velvet by the richness of fruit held in balance by its superb gravelly tannin structure and juicy acidity. Meerlust Rubicon 2016

The 2016 Rubicon shows great charm and drinkability even at this early stage, no doubt a result of the high Merlot and Cabernet Franc composition. We were very cautious with regards to tannic structure as some of the later Cabs exhibited astringency which we wanted to minimise in the final blend. Wonderful exotic aromas of plum, sandalwood and perfume, still with a touch of creamy vanilla. The palate is medium bodied with a forward dark fruit flavour of cassis and mulberry followed by a lithe tannic structure fleshed out with juicy fruit. The impression is one of litheness and grace rather than over-arching power.

Vineyard:

Soil: The Cabernet Sauvignon is grown on low yielding, predominantly biotite partially decomposed granite gravel topsoil rich in quartz and feldspar to a depth of approximately 600mm with a loamy clay subsoil. The Merlot vineyards are planted on more clay rich, yet well drained soils to ensure moisture retention and availability to the vines roots right through the summer. There are considerable deposits of iron-rich Laterite in the Merlot vineyards which accentuates the fruit definition and mineral profile of the wine. The Cabernet Franc Vineyard is situated on very well drained, stony Vilafontes soil with approximately 20% clay which is ideal for this variety.

The Petit Verdot is on Oakleaf 3 soils on a northerly aspect to ensure full phenolic ripeness

Vinification:

The vintage was generally later with some uneven ripeness showing in the later Cabernets. A decision was made to practice very gentle extraction to ensure the wines were not overly tannic or astringent. The Merlots were the star of the vintage and so extended maceration on our best Merlot tanks yielding succulent, opulent wines. The varieties were fermented separately with a combination of remontage and delistage. The wines were transferred to barrel early for malo-lactic fermentation in 55% new Nevers oak, 25% second fill barrels and the remaining 20% in older French oak barrels. The final blend is indicative of the vintage: 49% Cabernet Sauvignon, the lowest in Rubicon history, with 28% Merlot, exhibiting this varieties great expression in the unusual 2016 vintage, 20% Cabernet Franc and 3% Petit Verdot. The wine was barrel aged for 16 months before bottling

Aging Potential: 15 - 30 years, provided wine is stored in ideal cellar conditions.

The Estate Vineyards Syrah is elegant in 2016. Medium-bodied with a purple rim, the nose is shy at first and majestically opens with time in the glass. Notes of olive tapenade, red berries, vanilla and milk chocolate show its fine complexity and depth. The palate is darker, with a wild streak and mineral core. A hint of roasted herbs and cured meats lead to fine grained tannins on a soft, fruity finish. This juicy Syrah drinks well in its youth but will keep nicely for 5 years.

Boekenhoutskloof Chocolate Block 2018

The nose is exceptionally perfumed with an abundance of complex red and dark berry fruit, violets and intense aromas of white pepper. Dark brooding fruit follows through onto a structured, opulent palate with notes of cardamom, cumin, cloves and black pepper. The midpalate is rich, textured and balanced with integrated acidity, cocoa powdery tannins and a definite cedarwood character derived from French oak. White pepper lingers on a smooth, lifted finish.

Vinification & Wine makers comments: 

The 2017 Chocolate Block is a blend of Syrah (79%), Grenache Noir (11%), Cabernet Sauvignon (6%), Cinsault (3%) and Viognier (1%).

Due to the looming drought conditions, yields were much lower, resulting in higher berry concentration and healthier grapes.

Phenolic ripeness was easily achieved, with the harvesting of grapes taking place earlier, during the cooler stages of the harvest period.

The increased volume of Grenache Noir in the blend enhances the flavour profile significantly,

with Syrah being our structural backbone. The Grenache was matured in 600L barrels to retain its unmistakable fruity aromas and vibrancy.

The wine matures in 1st (all of the Cabernet Sauvignon), 2nd and 3rd fill French oak barrels as well as 2500L French oak foudres for 16 months

before it undergoes a light egg-white fining and filtration. 1 979 barriques were selected for our 2016 vintage.

Neil Elis Bottelary Pinotage 2016

Deep dark colour reflective of the vintage. This multi-faceted wine shows dark plum, cherry and blackberry fruit touched by elegant floral notes. The pallet is fresh with chalky fine grained tannins.

This Right-Bank Bordeaux-style blend showcases aromas of red fruits, mulberries and blueberries. You’ll find it tantalizingly soft on the tongue. Tokara Director`s Reserve White 2017

This wine displays a pale straw colour with striking brilliance that catches the light. The nose shows stunning complexity with fruit notes of ripe quince, passion fruit all intermingled with hints of lemon grass, toasted almonds and freshly baked brioche. The wine enters the palate full and rich reminiscent of the aromas on the nose. The wine finishes with amazing clarity and depth with a slight grip just lingering.

This wine drinks exceptionally well now but will continue to develop and improve till 2026.

Origin: This is a blend of 70% Sauvignon blanc and 30% Semillon. It was made from grapes grown on the highest slopes of Tokara’s Stellenbosch property..

Food pairing: Best served with foods such as grilled fish, roasted Quail and Duck.

Winemaking:

The grapes were de-stemmed and crushed and pressed immediately in our inert press. The press juice and free run juice were kept separate and settled overnight, before the clean juice was racked off. Only the free run juice from the best blocks is used in this wine. The juice was then inoculated and sent to barrel for fermentation. 400L barrels for the Sauvignon blanc and 225 L for the Semillon. All the barrels used were French oak of which 28 % was new. After fermentation the barrels were topped and left on the lees for 9 months with regular lees stirring. The wine was blended in November, stabilised, filtered and bottled soon after. The wine spent a total of 9 months in barrel.

13,700 bottles were produced. 

CROPPING AND HARVESTING

The vines cropped between 7 and 10 tons per hectare. The grapes were hand-picked at optimal flavour ripeness at sugars between 22.5 and 23.5 brix and acidities of 6 g/l to 8.5 g/l. 

Soils: The soils are Oakleaf formed from decomposed granite with colluvial sandstone. With a high fraction of gravel and friable granite.

Slopes: South and South-West aspects ranging from 360 to 540 meters above sea level.

Vinification: The grapes were handpicked at phenolic ripeness and stored at 10°C to ensure the finest flavour and freshness. Upon crushing, a temperature of 10°C was maintained and both skins and juice were left in contact in French oak tanks for 10 days. Varying from stainless steel, this approach provides improved colour and tannin stability. Upon fermentation, flavour and colour is allowed to develop for a period of 4 weeks before the wine is transferred to 60% new French oak barrels for 16-22 months. The use of new French oak allows the wine to retain certain flavours and extract tannin from the oak, resulting in a fuller mid pallet. By using 60% new oak, the fruits within the wine are respected ensuring the wine is complex yet settled with great ageing potential.

Fermentation: The grapes were harvested in the cool of the morning and gently pressed as whole clusters to conserve the vibrant, fruity flavors. Partial malolactic fermentation balanced the lively acidity and added complexity. Each lot was aged on the yeast lees (sûr lie) and was hand-stirred regularly (bâtonnage) throughout eleven (11) months of aging for seamless integration of flavors and a rich, creamy finish. The wine was bottled in November of 2018.

Tokara Director`s Reserve Red 2017

The wine has stunning depth of colour. Displaying an intense garnet centre and a ruby rim. The nose displays intense aromas of red and black fruits with hints of dried herbs, baking spice and graphite. The wine enters the palate with amazing clarity. The flavours are those of dark cherries, blackberries and ripe plum skin. There is a hint of spice on the mid-palate which leads to fine, firm tannins on the finish.

This wine drinks well now but will benefit from ageing until 2030.

Origin: This wine is a blend of 78% Cabernet Sauvignon, 11% Merlot, 7% Petit Verdot, 4% Cabernet Franc. The grapes originated from TOKARA’s premium vineyards on the slopes of the Simonsberg Mountain outside of Stellenbosch.

Food pairing: Grilled ribeye steak served with Béarnaise sauce, and potato Dauphinoise..

Winemaking:

The grapes were de-stemmed, before first passing across a mechanical sorting table and then a further hand sorting table before being crushed directly into tanks for fermentation using gravity feed and no pumps. There is a period of cold maceration for up to 5 days before the fermentation starts spontaneously (without the use of selected yeast strains). The grapes were fermented in stainless steel and wooden upright (foudre) fermenters. Pump-overs, délestage and punching down of the cap were implemented twice a day for extraction until fermentation was complete. The tanks were given maceration post fermentation if the quality and tannin profile of the wine warranted it. The wine was put to barrel for malolactic fermentation after which it was racked, sulphured and put back to barrel for further maturation. The wine spent a total of twenty-two months in 62% new French oak - the rest being older French oak barriques. During maturation the wines received four racking’s, all done barrel to barrel. The wine was bottled in January 2018 without fining or filtration. 15 400 bottles were produced. 

CROPPING AND HARVESTING

Only grapes from the best blocks and from the best parts of these blocks were used. The average yield is between 5 and 10 t/ha. The grapes were hand-picked at optimal ripeness between the 9th of March and the 11th of April.

It is aged for 3 years in Louis Roederer’s cellars and left for a minimum of 6 months after dégorgement (disgorging).

After the upheavals of the early 1900s, particularly the First World War that destroyed more than half of the Louis Roederer estate, Léon Olry Roederer reconstructed the vineyards. He decided to buy grapes to ensure the continuity of the House during this difficult period and, at the same time, created a multi-vintage wine that would have a consistent flavour, whatever the harvest year. It is now called Brut Premier.

The near-perfect growing season continued through harvest and our grapes were safely in the cellar as the valley's first significant rainstorm arrived late October. We are grateful for a fifth consecutive vintage of stellar quality Napa Valley wines. Our selected grapes for our Napa Valley Cabernet Sauvignon wine were picked between September 9th an October 11th.

Vergelegen G.V.B Flagship Red 2013

The 2013 is a beautiful and elegant wine with good concentration and lovely fruit.  The tannins are ripe and the wine has a long aftertaste.

Origin: Stellenbosch

The grapes are always sourced from the Rondekop Vineyards.  Grown at 200-220 metres above sea level, these vineyards are extremely wind exposed and this leads to thick skinned berries that deliver very concentrated juice.

Grape Varieties: 55% Cabernet Sauvignon; 35% Merlot; 5% Cabernet Franc; 5% Petit Verdot

Alc. 14,52% vol. 

Residual sugar: 2,94g/l

Total acidity: 5,6g/l

pH: 3,61

Vinification: Grapes were hand-picked and de-stemmed BUT not crushed. The de-stemmed grapes were cooled to 8°C and ‘cold soaked’ for 168 hours.  Fermentation took place at 25°C followed by a 35 day maceration on the skins.  After malolactic fermentation in stainless steel tanks, the wine went into 40% new French oak barrels for 17 months.

Maturation: Enjoy now or over the next 8 to 15 years.

Paul Cluver Seven Flags Pinot Noir 2018

Andries believes that the essence of a great Pinot noir is the purity of fruit and balanced acidity which gives structure to the wine. This wine has this essence, substantiated by its natural acidity. This is a very well defined wine with amazing poise, the colour is bright red, alluring and luminous. The aroma of this wine has wonderful elegant red and dark berry fruit expression ending with lovely soft oak notes. The palate is a combination of firm concentration and freshness. These flavours follow through onto the palate with some salivating savoury notes that has amazing length and complexity with great freshness lifting the fruit. 

Region: Elgin

Grape variety: 100% Pinot Noir

Food pairing: The natural acidity makes it a perfect partner with a diversity of dishes. Game fish, game birds and venison work very well, as does grilled beef and strong, hard cheese.

Winemaking: Extensive individual berry sorting was done by hand prior to destemming, no crushing of the grapes is allowed. After destemming the berries is transported in satellite tanks and the fermenting vats is filled by gravity. This was followed by cold maceration at 12°- 14° Celsius for 6 days. The fermentation in 3.5-ton wooden vats was allowed to start naturally, some vats completed fermentation without inoculation and others was inoculated with selected Burgundian yeast. During the fermentation, the skin cap was punched through by hand no more than twice per day. After fermentation, the wine pressed and racked to barrel for malolactic fermentation and remained on the fine lees for 12 months. To confirm the superiority of the vineyard sites, the earmarked Seven Flags Pinot noir barrels are tasted blind in conjunction with all the other Paul Cluver Pinot noir barrels in the cellar. The best barrels of the site are then selected and blended to form the Seven Flags Pinot noir. Total new wood component equates to 14%, whereas the second fill barrels are 41% with the rest 3rd and 4th fill.

Rotenberg Riesling GG 2015 dry

Argillaceous slate imparts charm to the Rotenberg GG, while the volcanic stone porphyry brings a sense of purity and delineation. The 2016 GG from the Rotenberg is gripping and sophisticated, a wine with great depth and complexity that demands focus and attention on the part of the taster. Soil: Vines up to 70 years of age planted in porphyry, ‘Rotliegend’ and argillaceous slate. This is the vineyard furthest away from the cellar of Gut Hermannsberg, in the Alsenztal – a side- valley off the Nahe, just a stone’s throw away. Its steep south-facing hillsides rise high above Altenbamberg, with soils developed during the Rotliegend period, which are permeated with rhyolite (formerly called quartz porphyry). The reddish colour indicates high iron content, and has thus given the site its name. The correspondingly unique mineral character of the wine sets the Rotenberg apart. Light breezes that play around its summit bring that certain extra something that allows the clusters to ripen until quite late in the season.

The palate is characteristic of Louis Roederer’s vintages: the attack is ample and dense; a rich and winey fullness is refined by the sweetness, acidity and tight blend of the Pinot noir grapes of Verzenay. ON THE NOSE: The fruit emerges as delicate, golden, muted exotic fruits - mango and kiwifruit - and dried fruit - hazelnut, almond and fig. A touch of iodine enhances this wine's flawless nose. The mild spices reflect the wine's depth - white pepper, smoked tea and cocoa.

Louis Roederer Cristal Brut 2012 in Case

Golden yellow in colour with glistening gold tints. Incredibly dynamic effervescence, so lively you can almost hear it!

Rich and complex aromas with notes of zesty and candied fruit (lemon) mingled with pollen (white flowers), roasted hazelnut and Madagascar vanilla. After aeration, the bouquet develops rich notes of fresh pastries and smoky notes from bottle ageing.

A delicious, concentrated and chalky palate. It shows incredible tension and perfectly honed aromatic precision. The attack is powerful, distinctive and concentrated and reveals a silky, mouth-coating texture, characteristic of the ripe Pinot noirs from the 2012 vintage. The finish is long and remarkably concentrated.

Cristal is the flagship cuvée from Louis Roederer. Created in 1876, it is composed of Grands Crus from the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs.

The dosage is 7.5 g/l.

Oliver Zeter Pinot Noir 2017

The Pinot Noir displays a fne, diverse and elegant cherry favor and runs through a partial maturation in wood.  Half of the wine was therefore stored for a period of ten months in used Vosges oak barrels. The young wine avoided mechanical stress during its processing period in the cellar. Subsequent bottling occur- red without fltration.

Pinot Noir (in Germany known as Spätburgunder) from the “Nussdor- fer Bischofskreuz” site comes from roughly ffteen year old vines which are rooted in sandy clay soil. The gra- pes are a particularly small and loose berry variant of the classic Pinot Noir which is lower in yield but higher in quality. The use of chemicals in the vineyard is kept to a minimum and insecticides are not used. An ecolo- gical nutrient cycle is attained using green manure. By green harvesting, we reduce the yield further for a total of 8,000 kg/ha. Grape de-stemming or the removal of stems occurred imme- diately after the grapes were received at the winery. Then the grapes were crushed, fermented and left on the skins for about two weeks. During ermentation, an over-pumping of the pulp called remontage was done twice daily. After fermentation, gentle pressing occurred using a pneumatic wine press after removing the free- run juice. This type of treatment pro- motes the extraction of aromas, color and fne tannins from the grape skins which contributes to even greater complexity.

Mulderbosch Chardonnay 2019

Vanilla pod and fresh custard are some of the comforting aromas that greet the nose, lifted by ripe fruit notes of sliced pineapple and papaya. With a distinctive golden hue, the wine appears rich and inviting. A refined chalky edge gives the palate cut, offset by rich and creamy weight on the mid-palate. The wine’s final length is marked by a citrus zest note that provides a long and rising terminal. 

A third of the wine was fermented in 300L French Oak barrels whilst the remainder was fermented in stainless steel tanks. After racking off fermentation lees the wines matured for 6 months before being assembled for bottling.

The Cabernet Sauvignon is dazzling in the top 2015 vintage.

It is medium in body but full in character, charm and structure.

With air, notes of cassis, mint, baked plums and liquorice unfold on the nose, leading to a richly-fruited palate.

Hints of dried herbs and beef stock add complexity and lure to the finely textured, fruit-coated tannins.

Five clones of Cabernet Sauvignon were utilized in the production of this wine with CS46C being our most abundant in clonal selection.

With an altitude of approximately 250 metres above sea level together with the cooling influence of the Atlantic Ocean just 15 kilometres away, this extends the ripening period by up to 3 weeks resulting in lovely phenolic ripeness.

The Meerlust Cabernet Sauvignon 2014 was vinified from selected fruit from low-yielding mature vineyards. The vines are densely planted on gravelly, low vigour Vilafontes and Dundee soil which has approximately 15 % clay to ensure water availability to the vines roots right through the growing season. The hand picked fruit was vinified in the traditional manner with partial un-inoculated fermentation and regular remontage. Only the free-run wine was used and aged for 21 months in tight grained French Nevers oak barrels. 50% of the barrels were brand new with 50 % second fill casks.

Vergelegen Cabernet Sauvignon Reserve 2013

The wine is complex, showing blackcurrants, spice, ripe plums and attractive wood aromas and flavours. It is full and rich with prominent tannns that bodes well for future ageing. A total of 30 000 bottles were produced.  2013 is highly regarded and seen by many commentators as one of the finest vintages in the last 30 years.  Serve decanted with lamb cutlets, rack of lamb and the very best rib-eye steaks.  Released May 2017.

The grapes were selected from Vergelegen’s Rooiland, Vineyards. These vineyards are all north to northwest facing, with granite, Hutton and Clovelly soils. Vines were planted 4000 to the hectare.

Meerlust Rubicon 2016

Tasted in early 2018, the Rubicon 2016 is showing all of the hallmarks of a great, classic vintage of Rubicon. Incredibly dense purple-ebony core with very slight gradation at the rim. The nose is brooding, dark bramble fruit, cassis, plum, incense and liquorice, it is still very tightly coiled, slowly offering cigar box, crushed stone and subtle oak spice. On the palate the wine is concentrated yet restrained with dark fruit flavours of pastille, mulberry and dark chocolate, all held in an intricate lattice of polished sleek grape tannin. Still very young yet approachable, this Rubicon promises a long future of maturation and enjoyment.

The Cabernet Sauvignon is grown on low yielding, predominantly biotite partially decomposed granite gravel topsoil rich in quartz and feldspar to a depth of approximately 600mm with a loamy clay subsoil. The Merlot vineyards are planted on more clay rich, yet well drained soils to ensure moisture retention and availability to the vines roots right through the summer. There are considerable deposits of iron-rich Laterite in the Merlot vineyards which accentuates the fruit definition and mineral profile of the wine.

The Cabernet Franc Vineyard is situated on very well drained, stony Vilafontes soil with approximately 20% clay which is ideal for this variety.The Petit Verdot is on Oakleaf 3 soils on a northerly aspect to ensure full phenolic ripeness

Vinification: Hand picked.  Partial whole bunch pressing and static settling overnight.

Aging Potential: 15 - 30 years, provided wine is stored in ideal cellar conditions.

This soft, approachable ruby-hued beauty is a true testament to vines lovingly reared and winemaking raised to an art form. A Right Bank-style Bordeaux blend, De Toren Z comprises a symphonic blend of five Bordeaux varietals. You’ll find it tantalizingly soft on the tongue, with a hint of aniseed, liquorice, raspberry and cranberries lending a fresh acidity to its polished finish… plus, of course, all the finesse that makes Bordeaux-style wines so prized among the world’s most enthusiastic wine lovers. De Toren Z comprises a symphonic blend of five Bordeaux varietals.

This Right-Bank Bordeaux-style blend showcases aromas of red fruits, mulberries and blueberries. You’ll find it tantalizingly soft on the tongue. A pure and soft integration of oak, lends a creamy finish with a hint of aniseed on the nose. It follows through perfectly on the palate, revealing juicy-red fruit. The integrated, complex and finely knit tannins of this Merlot-dominant blend finish of velvety, yet the blend is vibrant and expressive.

The magnificent 2015 vintage of this blend, recently awarded a spectacular 94 & 93 Points, by Wine Enthusiast & Platter’s Wine Guide respectively, and is even more phenomenal, elegant and balanced than before. 

Grape Varieties: 53% Merlot, 15% Cabernet Franc, 13% Malbec, 13% Cabernet Sauvignon, 6% Pertit Verdot

Food Pairing: This wine is a very versatile food pairing wine due to its great acidity and weight. It works exceptionally well with very fine spicy foods.

Its aromass of mulberries and blueberries perfectly complements rich fish, lamb, duck, beef and poultry. 

Decanting: To release all the flavours please decant at least one hour before consumption. It is recommended to serve this wine at optimal temperature (15-18 degrees Celsius).

Tokara Director`s Reserve Red 2016

The wine has stunning depth of colour. Displaying an intense garnet centre and a ruby rim.

The nose displays intense aromas of red and black fruits with hints of dried herbs, baking spice and graphite. The wine enters the palate with amazing clarity. The flavours are those of dark cherries, blackberries and ripe plum skin. There is a hint of spice on the mid-palate which leads to fine, firm tannins on the finish.

This wine drinks well now but will benefit from ageing until 2030.

Origin: This wine is a blend of 78% Cabernet Sauvignon, 11% Merlot, 7% Petit Verdot, 4% Cabernet Franc. The grapes originated from TOKARA’s premium vineyards on the slopes of the Simonsberg Mountain outside of Stellenbosch.

Food pairing: Grilled ribeye steak served with Béarnaise sauce, and potato Dauphinoise..

Winemaking:

The grapes were de-stemmed, before first passing across a mechanical sorting table and then a further hand sorting table before being crushed directly into tanks for fermentation using gravity feed and no pumps. There is a period of cold maceration for up to 5 days before the fermentation starts spontaneously (without the use of selected yeast strains). The grapes were fermented in stainless steel and wooden upright (foudre) fermenters. Pump-overs, délestage and punching down of the cap were implemented twice a day for extraction until fermentation was complete. The tanks were given maceration post fermentation if the quality and tannin profile of the wine warranted it. The wine was put to barrel for malolactic fermentation after which it was racked, sulphured and put back to barrel for further maturation. The wine spent a total of twenty-two months in 62% new French oak - the rest being older French oak barriques. During maturation the wines received four racking’s, all done barrel to barrel. The wine was bottled in January 2018 without fining or filtration. 15 400 bottles were produced. 

CROPPING AND HARVESTING

Only grapes from the best blocks and from the best parts of these blocks were used. The average yield is between 5 and 10 t/ha. The grapes were hand-picked at optimal ripeness between the 9th of March and the 11th of April.

Louis Roederer Brut Premier Champagne

Striking a perfect balance between youthfulness and maturity, seduction and character, freshness and vinosity, Brut Premier is a champagne that is harmonious and structured, elegant and lively, with a unique exuberancy. Its structured texture, richness, and length are distinctly winey. It is a full, complex wine that is both rich and powerful, whilst remaining a great classic.

A blend of around 40% Pinot noir, 40% Chardonnay, and 20% Pinot Meunier, Brut Premier comprises wine matured in oak tuns produced from three Champagne grape varieties that originate from various crus selected by Louis Roederer. It is aged for 3 years in Louis Roederer’s cellars and left for a minimum of 6 months after dégorgement (disgorging).

After the upheavals of the early 1900s, particularly the First World War that destroyed more than half of the Louis Roederer estate, Léon Olry Roederer reconstructed the vineyards. He decided to buy grapes to ensure the continuity of the House during this difficult period and, at the same time, created a multi-vintage wine that would have a consistent flavour, whatever the harvest year. It is now called Brut Premier.

The wine has fruity aromas of wild red berries, followed by floral notes, and the sugary and spicy fragrance of zest; and the aromas of dried fruit and cocoa result from the wine’s vinifying in oak tuns. Rich and full-bodied, the Rosé Vintage exalts the maturity of the fruit. In order for grapes to be used in the creation of a great rosé champagne, they have to attain perfect maturity, which is sometimes difficult to achieve in the changeable Champagne climate. This is why Louis Roederer decided to invest in the vineyards at Cumières, where the shallow calcareous clay soil, which is on south-facing slopes bathed in the light reflected from the banks of the river Marne, enables the grapes to attain optimum phenolic maturity.

La Motte Hanelli R 2012

The combination of a good vintage and 40 months of wood maturation has produced a wine with exceptional depth, complexity and personality. The intensely distinctive nose shows rose petal perfume with black berry and mulberry fruit, as well as cinnamon and black pepper spice. An elegant wine with a lively presence and lingering after-taste.

Origin: The wine is a blend of Syrah (60%), Grenache (30%) and Petit Syrah (10%). 50% of the Syrah originates from Elim and 50% from Franschhoek, the Grenache is from Walker Bay and the Petit Syrah from Franschhoek.

Vintage:

A number of factors resulted in a lower than average yield in most of the areas from which the grapes originate. Although it was reasonably cool during the growing season, some areas experienced drought conditions. Areas that did not have irrigation water available during the late season experienced further losses later. The season will be remembered especially because of the heat waves in late January – during three consecutive days the temperature rose above 40 degrees Celsius in the Boland, followed, a few days later, by two more days of above 40 degrees.

Viticulture:

The Shiraz vineyards of Elim are trellised and grow in shale with a layer of “koffieklip” (coffee stone). This, combined with the cool climate, produces wines with intense perfume avours and a minerally palate. The Franschhoek vineyards grow in deep, sandy soil of weathered granite and sandstone and produce elegant wines with a creamy texture. Bot River’s Grenache vineyards grow in more shallow, denser shale and produce wines with a high tannin content and a dark colour. Because the grapes originate from diverse terroirs, the wines have depth and complexity.

Viniculture:

The grape varieties in the blend were harvested and sorted separately and the wines were fermented separately and matured in 300-litre oak barrels. After 40 months’ maturation the wines were blended and then bottled during October 2016. Only 3 300 bottles were produced.

Continuum 2015 by Tim Mondavi

The dark, rich core of the 2015 Continuum has aromas of cacao, black currant, cardamom and savory wild herb.

On the palate it is layered and supple, revealing black cherry and roast espresso notes intertwined with mountain minerals and a hint of tangy orange spice. The wine is lush with ripe chocolaty tannins that lead to a long, expressive finish.

2015, though small in volume, is a mighty vintage for Continuum; one to savor today or age and appreciate for decades to come.

Decanting: 

For the fullest sensory experience we encourage decanting Continuum, to allow the wine to breathe before serving.

Decanting awakens the wine’s more purely fragrant expression and enhances the suppleness of the palate.

Vintage Notes:

The 2015 season was the fourth year in a drought cycle with unseasonably warm weather and drier than normal soils.

The vines responded by breaking dormancy mid-February resulting in an early bud break.

An untimely cold snap led to a drawn out pollinization period significantly hindering fruit set, especially in the Cabernet Sauvignon blocks.

This resulted in dramatically lower yields, reducing our estate production by half the normal harvest. Yet the 2015 is actually a blessing in disguise. Looser clusters allowed greater light and airflow which, along with above average seasonal temperatures, led to consistent ripening and steady evolution of phenolics. A particularly vinous and tactile vintage, it is rich and succulent, revealing great depth of character reflective of this unique site and season. 

Production:

Continuum is 100% estate grown, produced and bottled.

All fruit was selectively hand-harvested into small lug-boxes, sorted before and after de-stemming, then gravity fed into French oak tanks or concrete tanks for fermentation. After fermentation, all lots were drained, with pomace pressed separately, to 68% new small French oak barrels for malolactic fermentation and aging. The wine was clarified slowly and naturally through the use of traditional settling and racking techniques and bottled without fining or filtration. Each vineyard lot was tasted and carefully considered when assembling the 2015 blend. The 2015 spent a total of 22 months in barrel.

Wine Growing:

100% of the 2015 Continuum was grown on our Sage Mountain Vineyard on Pritchard Hill in the eastern hills above Oakville.

Our 38 acres of mature estate vineyard, with vineyards planted in 1991 and 1996, has a variety of western and south facing aspects with plantings of Cabernet Sauvignon, Cabernet Franc, Petit Verdot, and Merlot. In addition, new plantings were added in 2010.

The 2014 vintage was precocious – marked by the earliest bud break in our history.

Timely rainfall and a continuation of mild and dry conditions throughout the year allowed the grapevines to support the slightly higher-than-expected yields. Following a near-perfect growing season, harvest commenced on September 5th just as the grapes reflected an ideal balance between freshness and concentration. After an early rainstorm, there was a brief pause; but the succinct harvest was completed on October 7th.

Initial dark fruit, spice and baking aromas in the 2015 Opus One are interwoven with seductive notes of violet, black tea, and sage.

The entry is vibrant with ripe dark fruit flavors of plum, blackberry and blueberry followed by hints of vanilla and cocoa.

Silky, fine-grained tannins provide structure and a creamy texture.

The wine finishes with fresh acidity and a rich, lingering finish that promises longevity in the cellar. 

Vintage: 

Marking the warmest year since 2008, the 2015 growing season set are cord for early bloom.

Drought conditions persisted, and rainfall was erratic, with most of the much-needed rain falling at the end of the previous year and supplemented by only a single storm in February, which was enough water to sustain the vines.

Cooler conditions during flowering ultimately lead to a smaller number of berries on each cluster and lower than average yields.

Warm summer months led to advanced veraison, which was followed by perfect ripening conditions.

Harvest began on September 1 with short pauses; heat spells and continued warmth allowed for the berries to be steadily picked at their ideal maturity. The harvest was completed on October 8.

Opus One 2010 by Robert Mondavi & Phillipe Baron de Rothschild

The 2010 vintage will be long remembered as a uniquely demanding year.

Mother Nature was capricious and challenging in presenting us with tremendous variability –

unseasonably cold days, untimely rain fall, and surprisingly sunny and hot days.

While colder than normal, the leaves were able to produce the needed sugar, while the grape berries developed lovely and complex flavor and

aroma components. Bud break and flowering were eight days later than the 5-year average. Unexpectedly high temperatures in late August and September allowed the vines to finish the growing season very well. Having left the sufficient number of leaves on the vines so as to have a full canopy, our grapes avoided possible sunburn from this late season heat. The success of the 2010 harvest was assured when we correctly assessed the early maturity of the grapes and had the confidence to pick at the first sight of ripeness. Harvest began on September 23 and succinctly concluded thirty-one days later on October 23. Aromas of fresh blackberry, rose petals, chocolate and espresso accentuate a profound tapestry of fruity and earthy nuances. Round velvety tannins enrobe a silky texture with a slight touch of minerality. The flavors of dark fruit are enhanced by the well integrated acidity. The acidity and tannin structure promise a very long life ahead for this wine.
